Salad in Pita with Sweet Potato Fries
This is a great idea of changing the ‘outfit’ for you daily salad and adding Sweet Potato Baked Fries. Tastes heavenly but is fresh and not heavy rather healthy. Give it a try!
SERVES: 1
PREP TIME: 5-10 min
NEED: oven with top grill or broil
INGREDIENTS:
- 1 pita bread
- 1 plum tomato, sliced
- 10 cm of cucumber, sliced
- 10 cm of pickle or cucumber in brine, sliced
- 2 tbsp of Mayo
- Fresh Sprouts
- Sweet Onion – few feathers
- 5 cm Leek – sliced
- 1 sweet potato
- 2 tsbp of canola oil
- sprinkle of Salt

- Toast or grill Pita bread
- Spread Mayo on both sides inside pita bread
- Stuff pita by layering pickles, tomato, onion, sprouts, leek, cucumber in this order.
