Quick & Creamy Tomato Soup
One of the quickest soups and last resort  because I ofter have these ingredients in my kitchen.

SERVES: 3-4
PREP TIME: 20 min
NEED:Â 2 liter pot, blender
INGREDIENTS:
- 1 liter tomato juice
- 1 small onion
- 2 garlic cloves
- 1 carrot
- 1 parsley root
- 1 cup sour cream 18%
- 4 tbsp oil
- 1 tsp basil
- 1 tsp sea salt
- 1 tsp sugar
- pinch of chili
RECIPE:
- Cut in bite size pieces vegetables 1-5, add oil to the pot, add vegetables, then hear up and simmer for 5 minutes.
- Add tomato juice, salt, chili, sugar, basil and bring to boil. Cook for 10 minutes.
- Add sour cream.
- Blend until smooth and creamy using hand blender or food processor/blender.
