Potatoes with Fried Onions
This is very summery meal or side in Poland, when fresh and ‘young’ potatoes are in season and available from the farmer. Sweet, yellow and melting on your mouth – if you can get this quality potato, than you don’t need much with it, just like I did in this post. I eat them alone or with kefir or yogurt to drink with.
SERVES: 1-2
PREP TIME: 30 min
NEED: 0.5 l cooking pot, frying pan
INGREDIENTS:
- 300 g potatoes, peeled
- Bunch of green onions, chopped
- 2 tsbp butter
RECIPE:
- Cook potatoes until they are soft. Usually 10-15 min, but depends on your potatoes. Check them by pulling a fork in to see if it slides in smoothly. Drain.
- Melt butter in the pan, add onions, fry on low/medium heat for 5 minutes, until soft.
- Add potatoes to the pan. Fry on low heat for few minutes, make sure they are well covered in butter. Be careful not to burn butter.
PAIR WITH: cooked meats, cold salads, yogurt, kefir
Wonderful recipe. Reminds me of my Grandmothers potato’s.
